Knife purpose: Japanese Honesuki knife is a boning knife that is used to cut the meat from the bones (in Japanese "Honesuki" means “the bone knife”) Honesuki, comparing to a western boning knife, are not flexible, but better efficiency and edge retention. Honesuki knife has a triangular shape blade with a thin and angled tip (makes it agile to navigate in and around joints) and the belly is more flat (perfect for slicing around poultry breasts).
