Japanese slicing knives

Sujihiki is one of the famous Japanese slicing knives. In Japanese, Sujihiki means "The Flesh Slicer," which is the perfect-fit name. The long, narrow, and thin double-bevel blades are excellent for delicate slicing meat or boneless fish. The most popular Sujihiki blade lengths are 240mm and 270mm. With a Japanese Sujihiki knife, you can easily make a ideal slice with just one smooth motion instead of a sawing. It is not a secret that exactly the cut surface's smoothness affects how fresh the sliced meat or fish will look on the plate.
