White steel 1 Steel
Shirogami #1(White paper one) is a Japanese high carbon unalloyed steel manufactured by Hitachi Metals Corporation. White paper 1 (Shirogami 1) has a 1.25-1.35% of carbon, similar to Aogami 1, except for chromium and vanadium in composition. The usual Rockwell Hardness of Shirogami #1 is about 62-64 HRC. Most Japanese chefs prefer Shirogami #1 blades for the highest level of cutting edge holding, and sharpness among all Shirogami series from Hitachi.
