Blue Super Steel Japanese Knives

If you want a Japanese kitchen knife that cuts extraordinarily well, we recommend knives made from Blue Super steel (Aogami Super in Japanese). It is a top-class tungsten-alloyed carbon steel developed by Poterial Ltd, especially for blade artisan's needs (Hitachi Metals Ltd in the past). Aogami Superl has extremely high hardness (around 65-67 HRC) and unmatched wear resistance. Many professional chefs and culinary enthusiasts rate this steel as one of the sharpest carbon steel ever developed for bladesmithing. Despite all the benefits, Blue Super is quite a challenging steel for the forge, and it takes much longer than other Poterial's "Paper" series steels. Only skilled bladesmiths can unleash its full potential. In everyday use, the Aogami Super knives, like any high-carbon steel knives, need extra attention and care because of prone to corrosion. Also, high hardness makes it slightly delicate, prone to chipping the edge chipping, especially at small angles.
